Quinoa and Rocket Salad

Cook quinoa as per package directions, with a stock cube. Meanwhile, roast tomatoes with thyme, garlic and olive oil. Mix quinoa and tomatoes together with rocket, peas and soft feta. Dress with lemon juice, olive oil, salt and pepper. Perfect for barbecues, picnics and feeding a crowd.
