Masala Peanuts

Masala peanuts are a mainstay of barflys in India – it is maybe the only thing worth ordering in some seedy drinking establishments.  But really, with this and a Haywards 5000, maybe a few papadums, why would you bother with anything else.  In my mind this in the ultimate accompaniment to cold beer on a hot day.  Done well this salty fresh and spicy combo will keep your vitamins and thirst going for all five days of a test match.

1 cup raw peanuts

Small bunch fresh coriander

1 tbsp vegetable oil

Half a red onion

2 chillis – a red and green one for colour (make them hot)

1 tomato

Chaat masala (or garam masala and and pepper) to taste

Heat the peanuts in a pan till they start to smoke. Remove from the heat and leave to crisp up – about ten minutes. In the meantime, finely dice the onion, tomato, chilli and coriander. Mix into the peanuts and add salt and and chaat masala to taste.
